Artificial Intelligence is a field in Computer Science thay one can specialise in with  advance degrees in computer science. Let us consider the two universities that you suggested.
NIIT University was started in 2009 and is a fairly young University  when compared to RVCE college Bengaluru which was started in 1963.NIIT offers B.Tech as well as Master of Science degree in Computer Science . RVCE college also offers an undergraduate as well as M.Tech degree in Computer Science.
Both RVCE and NIIT are AICTE recognised.
 

   Moreover, RCVE has been recognised as a centre of Excellence by the government of India under Technical Education Quality Improvement Programme(TEQIP) so if you work and develop any project and gets selected by your TEQIP board in college then you will get funding from the central government under TEQIP. It will give you opportunities to develop your projects further and it will be fully financed by the government of India. And for fields like artificial intelligence ,it is important that one works on projects and practical implementation to undertake and specialise in the field. With such opportunities ,you will definitely get the chance to hone your knowledge and skills in Artificial intelligence. Also RVCE has many affiliations and memorandums with institutions and companies both outside and within the country  mentioned . The placement scenario is quite good in this college.The average salary offered is Rs 5.45 Lakhs per annum.Highest salry offered is Rs 26 Lakhs per annum.Total of 145 companies visited the campus for the recruitment drive. Pre-Placement Offers (PPOs) were received by 72% of the batch from their respective organizations. Lowest salary given was about Rs 5.4 LPA.Hence the unversity offers good placement scenario.

NIIT University is not a government university. It is a private University which has been founded in the year 2009. The founder of the university is Rajendra Singh Pawar. And the location of university is Rajasthan India. The university offers the following mentioned below course 6 at undergraduate and postgraduate levels:

YES, NIIT University in Neemrana Rajasthan is a ver good and decent University having good placement opportunities for CSE (Computer Science Engineering) Students.

Both the institutes are pretty good. The branches of CSE and IT are pretty similar too. If you have an interest in Higher studies than I would suggest you to choose CSE. The placement of both colleges are good for CSE and IT branch, but are a bit better for NIIT Neemrana. In NIIT, you will be provided with notes and video lectures. Attendance is not that important in NIIT, whereas you need 75% attendance in Symbiosis. Neemrana is in a remote location but is full of campus life with very good faculties. Symbiosis faculties are good and average. Both college gives much importance to internships.
