Since, you'll be graduating 2019 and will be giving CAT 2019.

You are left with two choices : Eityer Do something or Focus on CAT

1. DO SOMETHING :

I would suggest to join an NGO , where the workload will be less and you'll be able to justify in PI process.

Another, try getting Internship from Internshala related to Management which would be helpful to build up your resume as a fresher.

2. Focus on CAT

Since, it will be a not huge gap after your graduation, you can justify by doing some certificate course alongside and prepare well for CAT exam.

Internships do not have a weightage in admission process of IIMs. Instead apply for companies in your domain no matter how big or small they are. Get some workex under your belt. Generally any workex between 20-24 months is ideal. It's not necessary that you have workex related to your field only, instead other fields can provide you an edge in the interview as you can show some versatility and learning from other fields as well.

Moreover if you still want to go for internships make sure to get a certificate at least from that. Or be a part of a project that helps the company in doing something. Like solving a problem.

You can instead do some proffesional courses on excel and PowerPoint from Coursera or Udemy or take part in case study competitions or do something that has got some value. Any projects that can set you apart from the crowd or it gets you into news or any competitions that you can win at state or national level also helps.

A big no for internship IIMs don't give any weightage for it. Though it only give weightage to work experience. So if you want to learn something more which gives you an edge then go for certification course like Sig sigma, python,  Tableau and R. If you advance excel then its good else give priority to learning this as well.

But you should do all these things once you are thorough with the CAT preparation. You have to focus on exam first. Then you consider that you have plenty of time go for it.

It is not necessary to attend any intership to get into any IIM. Working experience from 2-11 months is considered as fresher only. If you want to go for an internship, then it is not necessary that it should be in line with your academics. You can do it in any field and I would suggest to select the field you are intersted in. This will add value and can be somewhat helpful in your interviews.

If you are not interested then just focus on CAT examination and give your best.

I remember i was in your position about 3.5 years ago. I gained a work experience of 2 years then appeared for CAT. One thing that i realized was that the internship/job shouln't mandatorily be related to physics. It should be something that helps you provide an exposure to the work culture.
Studying physics adds up to the divesity when you appear for a CAT exam. And an additional internship adds to the talking points when it comes to the interviews.

It is not manadatory for you to intern to enter into any of the IIMs. My personal suggestion would be to go for internship, only if you are interested and ready to do it diligently. It is not necessary that it should have relation with Physics. Go for any of internship that you feel will accelerate your learning curve and add value to your overall profile. In case you are not interested, drop the plan and focus only on CAT prepartion.
