The practical and theory scores both are considered for your eligibility to BITSAT or Jee mains. However, your board scores will not affect your ranking in either of the exams, your rank will be based on how much you score in the entrance exams only.

For admissions to NIT through JEE Mains or for the BITSAT exam, the practical maarks are also considered in Physics, Chemistry and all the other subjects in which practicals are involved for every board including Gujarat Board. As for how many subjects are considered, generally 5 subjects are consiered while calculating your percentage or percentile score.
