Definition:
Fatty acids are the building blocks of fats and oils in our body and food. They consist of a long hydrocarbon chain with a Carboxylic acid group at one end.
Types:
°saturated: No double bonds(solid at room temperature)
° unsaturated: Have double bonds (liquid at room temperature)
-monounsaturated:1 double bond.
-polyunsaturated: Multiple double bonds
Key: their chemical structure determines whether they're solid or liquid and how they affect our health.

A fatty acid is a carboxylic acid with a long aliphatic chain, which is either saturated or unsaturated. Most naturally occurring fatty acids have an unbranched chain. Fatty acids are made up of carbon and hydrogen molecules.
There are three types of fatty acids-
- Saturated fatty acid - fatty acids do not have a double bond between carbon atoms of their chain and consist of the maximum possible hydrogen atoms.
- Monounsaturated fatty acid- fatty acids have a single double bond in their chemical structure
- Polyunsaturated fatty acid- fatty acid have more than one bond
