Sucrose is extracted and processed for human use from either sugarcane or sugar beet, depending on the variety. Sugar mills, which are usually situated in tropical areas near where sugarcane is produced, crush the cane and create raw sugar, which is then transported to other facilities for refining into pure sucrose. Sugar mills are a kind of mill that crushes cane and produces raw sugar. Sugar beet factories are found in temperate regions where the beet is cultivated, and they are responsible for the direct conversion of the beets into refined sugar. The sugar refining process begins with the washing of raw sugar crystals, followed by their dissolution into a sugar syrup that is filtered and then passed through charcoal to remove any remaining colour. As a final purification step, the sugar syrup is concentrated by boiling under vacuum and crystallised, resulting in crystals of pure sucrose that are transparent, odourless, and delicious.
