One can also write the CAT Exam in the final year of Engineering. Generally the exam will be held in November or December every year. Your result will be available in January. As you will finish your Engineering by April or May, in these months you can apply for the Colleges and you will get the interview calls from them too. You can start your MBA career after you got selected.

You can always apply for MBA during your final year if your college allows and definately get a call if you are selected but during the time of admission you have to hand over the documents and your college degree. Till then you can prepare other documents.
