Can we take additional subject marks in top 5 subject of class 12 to make them 75%??

even though professor will take that.

Yes you can, but you cannot exclude your language paper.

75 %is required marks to take admission it IIT so can we include additional subject marks??

Thanks for the question  

You cannot do that. 

There is a rule regarding it. 

English is compulsory and 4 other subjects in 10th 

English and three other subjects in 12th.
