Hydrolases - Enzymes that catalyze the breakdown of larger molecules into smaller ones with the addition of water.
Eg - all digestive enzymes (like proteases, lipases, amylases, nucleases, etc.)

Lyases - Enzymes that catalyze the breakdown of larger molecules into smaller components without the use of water.
Eg. Aldolase, Carbonic Anhydrase
