You can choose one or two subjects for IIT JAM examination, but the subjects you choose must not be in the same session.

The exam will be conducted in two sessions. So, you have to select the subjects according to the two sessions.

Biological Science (BL) subjects JAM exam will be held in session -1. Yes, you can choose only a single subject. No problem.
