Amylose is soluble in water and can be hydrolysed into glucose units by the enzymes - alfa- amylase and beta- amylase. Amylose is a simple structure as compared to amylopectin. Amylopectin is a polymer which is made up of or composed of several D- glucose molecules. Amylose constitutes of 20% of starch. Amylopectin constitutes of 80% starch and is less soluble in cold or normal temperature water. In amylose, the Bonding involves alfa- 1-4 glycosidic linkage whereas in amylopectin the Bonding involves alfa- 1-4 glycosidic linkage and alfa- 1-6 glycosidic linkage along the branches.
