IHMs are all government colleges for various courses in hotel management. 

IIHMs are private colleges in different cities for the same.

If you want to pursue your career in India, IHMs ate better, whereas if you want to pursue your career abroad, IIHMs are better as they offer foreign degree.

Though, better retail sectors and hotels come to tje government college, i.e., IHMs.
