You can't compare these two professions. It also depends on your interest and passion. If you are interested in engineering you can go for IIT and if you interested in defence services you can go for NDA.

They both are 2 different things but in NDA if you wanna do any other course as optional like engineering or any other stuff they will make sure you do what you want to do.But as stability you cannot say which one is better.
