This is a very ambiguous question you asked here. For NEET 2021 no one can tell will the paper is going to be easy . As for this year students were guessing that this year's paper is going to be tough because previous year (2019) NTA also put out an easy paper. So as of now, this cannot be said that paper is going to be easy but what you CAN do is preparing very well.
