It doesn't change any thing if you taking 5 subject or 6 subject in 12th boards. The main thing in jee mains criteria is to fulfill the 75% marks requirement in 12th boards. If you are getting 75% or more in 12th boards with 5 subject or 6 subjects , you are eligible for JEE mains admission procedure. So, try to aggregate your marks to fulfill the requirement and try to score more than 75 on PCM.

The Envelope containing Application Form for Equivalence must mention at the top of the cover: “APPLICATION FOR EQUIVALENCE /RECOGNITION . Self attested copies of documents in proof of 10+2+3+2 mode of study. Self attested copy of T.C.

YES you can do class 11th and 12th again from the UP board even if you have already passed class 12th from the NIOS board and it is legal to do that.
Students who have passed the secondary/senior secondary course from any National/state board of school education and want to take admission for the same course, you can continue your education towards a Senior Secondary Certification, equivalent to XII standard.

NIOS is one the most recognized open school learning in India.
The basic concept of On Demand Examination (ode) is that NIOS Student can walk into the examination center as and when he/she feel ready for the examination.
The NIOS board is recognized by all universities and education institution in India.
You may enroll yourself gor nios at www.nios.ac.in (NIOS WebSite).
After that the Registration form will appear where you have to Register for the Examination.
As of Block 1 registrations from 1st Sept. to 15th Sept has to be submitted with late fee of Rs. 700/-

Sad to hear that due to Covid your 12th Board percentage got decreased to 60%. But you can increase your marks by giving NIOS .
For JEE MAINS, a student must have to score 75% or above in his/her 12th Board which must have Physics, Chemistry, Maths and English as an additional mandatory subject.
To increase your percentage, you can definitely repeat your Class 12th by giving NIOS examination. If you want to give exam for only one subject then the marks of rest of the subjects will be automatically added to your newly generated marksheet of NIOS.
So, coming back to your question, YES , you can definitely increase your percentage to 75% and above if you study well for it and give NIOS examination of 12th Class. Furthermore, the newly generated 12th Marksheet will not at all interfere with your JEE MAINS & IIT-ADVANCED exams if you score minimum of 75% in your NIOS 12th repeat exam .
