Hey prakash , AIIMS exam in totally irrespective of whether Assertion and Reasoning or not are not just strictly restricted to NCERT syllabus..it will cover all of 11th and 12th grade and may be from any board, buy yes predominantly NCERT , I would suggest you to read and practise questions not only from NCERT but also from other books that you buy in market or from the good coaching institutes that craft questions based on previous year , good luck

I am sorry buddy, i dont see you mentioning physics, but even then my answer is the same, you cant stick only to the NCERT board, they can take from aywhere and 11th and 12th syllabi are broad,good luck
