Hey,
The syllabus of NEET and AIIMS include the Physics,Chemistry and Biology of class 11th and 12th. In class 8th you should work on building basics  and get your concepts cleared. Develop your analytical skills.
The books that you can refer for AIIMS and NEET are  NCERT Physics,Chemistry and Biology. You must be thorough with NCERT. For reference,you can refer to MTG Publication for Physics. For Chemistry you can refer to OP Tondon.

i m sorry to say its very very early for you for an NEET and AIIMS preparation as you are in 8th class , but  i would like appreciate you that you have goal for MBBS so for that i can suggest you , bulid up the basics first with higher education make sure are good in fundation as of now that helps you
