Hey

SET offers you admission in Symbiosis Institute of Technology which intakes for 420 seats, while UPSEE is an entrance exam to take admissions in top 10 colleges in UP meant for engineering admission.

You can also take admission in SIT through JEE-Main counseling procedure. I will refer you to go for UPSEE, as it offers more chances of admission as compared to SET. So, it also depends upon your preparation level for both the exam. Go for the one for which you are completely prepared and confident.
