Yes you can obviously take science and then become an IAS officer. I have seen a lot of people (my seniors) who have taken science and have become a successful IAS officer. First you should concentrate on the science subjects and you should have clear concepts of them. After 12 boards exam, you can start your preparation. Go for any coaching institution or youtube videos are also there. If becoming IAS officer is your passion then give 3 hours every day in your preparation.

Yes,you can go ahead with science stream it's not going to anyway impact about your chances for appearing in UPSC and in future even qualifying this exam
The reason being eligibility of UPSC is passed graduation in any discipline from a recognized university and there's no minimum aggregate required in this case,you can also apply in the final year,you need to attain 21 years age.
In the past,many people from science background that of Engineering,Medical have qualified this exam,so there's no way why you shouldn't. In fact,it's good to have a back up plan, you can also go ahead with career choice and gain some experience in your domain and later on appear for UPSC,many people do that,you can consider this option as well.
