As per the eligibility criteria, the minimum and maximum age of the applicants should be 21 and 30 years respectively as on April 1, of the year of examination. Now you were born on 2000, there fore you'll complete 21 in 2021 October which makes ineligible for SBI PO 2021.

The minimum age to appear for IBPS PO 2021 is 20 years and the candidate should at least have a bachelors degree from a recognized university. As you have completed your graduation you can appear for IBPS Po and you have also completed 20 years on this October. So you're eligible to apply for IBPS Po.
