It is very difficult to say the number of questions that should be correct because the paper changes every year and so does the difficulty as well as the pool of candidates applying for the same. Every year as you give mock tests at national level you should be able to judge how many questions give you a 99%ile.
To get a call from IIMs you need atleast 95%ile overall and 80 or 85 %ile and above in each section depending on the institute you are applying for. It is safe to have 90+ in each section and above 95 overall to get decent calls.
The strategy I followed for CAT was to get atleast 2/3 RCs correct i.e around 12 questions and atleast 6-8 in VR and some 2-3 anonymous. so total 22 in verbal. For LRDI solve 4 sets i.e 16 questions and for Quant atleast 20-22 questions. These should give you 90%ile and above in a moderate paper. For easy paper you have to answer more and for tough paper evn lesser number of questions will give you a good percentile.
