Physics
NCERTs are the most important but it is bit difficult to understand everything from NCERTs of Physics. So, you must refer some other books also. In my case, O studied HC Verma but it is much more than what is required for medical students. SL Verma is also a good option. DC Pandey, fundamentals of physics, Pradeep are other good options.
Chemistry
It is comparatively easy to understand from NCERTs only. Plus, you don't require anything more than NCERTs particularly for physical, inorganic and general chemistry. However, for organic, conceptual knowledge is of prime importance. You need to know everything about a reaction to be able to solve questions. For that, refer books like Ms chouhan or ABC of chemistry. I used op Tandon bit again it was much more than necessary.
Conclusion
Remember, you need to build concepts and for that you can study from anywhere. The thing that matters is that you should be able to solve questions. If you can do so, everything is fine. Never leave NCERTs, they are the gold standard. Other books should be used only for reference. Solve previous year question papers, mock tests to assess your concepts.
