I am planning to drop NEET 2020 and repeat NEET in 2021. Should I need to upload documents for NEET verification this year. (I mean documents of NEET 2020)

As you said you are planning to write NEET in 2021 that means you got less marks in NEET 2020. So, their is no need to submit your documents for verification. But still you want to give a try you can verify your documents.
