SRMJEE is pretty easy compared to the other. Here, the questions are straight forward. SRM Jee is considered easier than VITEEE. SRMJEE involves problem solving, for which your fundamentals have to be clear. VITEEE on the other hand, covers various concepts that are not in JEE advanced syllabus and you have to know a lot of concepts ( relatively less a test of problem solving). However it depends on which board you are in. VITEEE is considered similar to JEE Mains in syllabus.

You can refer to the syllabus and sample papers of both to get an idea.

I've written all three exams. So I can give you a clear perspective.

SRMJEE is pretty easy compared to the other two. Here, the questions are straight forward. If you know the right formulae you would be able to score well.

VITEE is a bit harder. Here the questions are a bit tricky. So if you're preparing for JEE Mains it'd really helpful.

MUOET  for manipal university is easy, but you would have to attend around 200 questions in two and a half hours. If you are able to manage your time and be accurate at the same time, this would be an easy exam.

Both of these exams are almost same in difficulty level or we can say that comparatively these both are easier then JEE mains examination. If you have good command on concepts and read NCERT heartedly, then it will become easier for you to qualify these entrance examination.

However, Srmjeee is little bit easier than Viteee, therefore competition in Srmjeee is a bit higher than Viteee.
