Without NEET exams, you can apply for various courses in medical field like B.pharma, Bsc nursing, and also different paramedical courses which are in high demand now.

If you want to make a career in the medical field then NEET is pretty much 80% of the field and there is not much left out of the domain of NEET.

However, two other courses you can find, other than NEET and from Medical background are B. Pharma and Nursing. These are also related to medical fields, but are not like doctors.
