you can do M Tech and PHD. There is no mention of age limit for these courses in IITS. I have gone through their admission Bulletin. I am planning to do M Tech from IITs @47

well there is no age limit for appearing the gate examination but even if you get a valid score you can get into colleges and iits cause the maximum age would be 30 for applying into the colleges .
