Subject means are you talking about the branch then it depends on your interest. The branch in which you are interested is the best branch as you can excel in that branch more faster than any other branch it also depends on the college in which you are taking admission for different college condition of branches is different.

You can not compare any field ,instead you should choose a branch of your interest and in which you want to gain knowledge.You can go for CSE or IT if you have interest in programming, you can go for ECE if you want to know about electronic circuits, etc.

This depends solely on your interest.
This is purely a question related to point of view,what's best for someone might not be the best for you.
Also,there's no such concept of a in demand branch as all the branches have more or less the same demand when you count both the private as well as  the public sector.
So,I'll advise you to follow your passion and go for the subjects you like.
