It is nice to see that you have decided the career path and chose engineering as your stream. Before one pursues engineering course, he/she goes through rigorous training of 2 years of JEE coachings and all. There are plenty of institutes offering training for cracking these exams easily.
As per my opinion, it depends solely on the person to decide whether he/she takes training from institute or not for cracking JEE. He/She should able to maintain a balance between school chores and JEE training schedule. JEE training provided by institutes becomes slightly hectic when one could not move with their pace. You have advanced training by teachers, weekly tests, monthly tests, wherein you must score well than other candidates. For that, you must follow a strategy that would give you an edge over others.
A step-by-step process would guarantee you the best results, creating a balance between both. Some of the possible steps that could be followed are:

AIIMS and NEET PG both are completely different. NEET is more factual, AIIMS more clinical and concept based. Hence, if you have a good grip on basics, you may get AIIMS. There are many who do not get good rank in NEET but score well in AIIMS.
I would highly recommend you to give AIIMS.

The syllabus of JEE (Main) will consist mostly of topics from 11th and 12th standard syllabus and it is practically not possible to complete the whole syllabus in two weeks. NO, you cant but it can be done if you know everything and are preparing for competitve exams regularly.
NCERTs are the best books to clear your fundamentals. However, considering the competition level of NEET exam, you should refer to other important books also for in depth knowledge and to score a good rank in the exam.
During the last few days for preparation, smart study will help you alot. Smart work is as important as the hard work to score a good rank and get a seat in any decent medical college.
You should cover the topics which carry more weightage. It has been analysed that out of 7060 concepts/definitions in physics, chemistry and biology in NEET, only 16% concepts/definitions were asked till 2017 paper and 73% paper of NEET UG 2018 was based on these 16% concepts/definitions. You should work on these concepts only to score good marks in the exam. You should solve previous years question papers and mock tests. It will help you to know about the exam pattern and type of question asked in the exam.
