Apart from these if you want to become a software developer then go for nsut, overall nsut is also a good college.

Look, IIT Delhi is the best one as a college. You will get to study from top of the class professors, meet and work with some of the smartest people in the country, and have about one & half times better facilities and opportunities compared to NSIT.
But, when the comparison is between the streams, I will say cse is much better than the other one. For cse, the nsit is famous as it is the best stream here.
So, my suggestion is go for nsit cse.

Yes technically you could study AI in some colleges, but that would be a tough process to enter there. Because for that you have to show what expertise you already have in the field of AI and ML.
For the robotics and automation, you can go for the MS as this will be related to your field. Therefore this would be a good option for you.

Getting a seat in IIT Delhi is a great opportunity that it's not that pleasant to reject it. IIT Delhi offers highly efficient research and work labs for academic purposes. The faculties are highly experienced in their respective fields, and are one of top professors of the nation. NSUT also provides good facility and is a renowned university in Delhi, but IIT Delhi weighs more.
Which course is difficult depends on an individual's perspective. A person who is interested in dealing with Machine language and software, would feel CS to be easy while a person who is interested in automated production and problem solving, would feel Electrical Engineering in Power and Automation to be easy. Syllabus-wise Electrical Engineering in Power and Automation is vast but not difficult.
Getting a more paying job not only depends on the institution but also on your overall academic performance and skills. In both sectors, a highly talented and well efficient graduate with good communication, leadership and creative thinking skills is paid enormously.
