As per your mentioned query , to become IPS officer your subjects doesn't matter what you choose as per the UPSC Civil Service Examination requires a bachelor's degree in any stream from recognised college. You can choose PCM , PCB ,Arts , Humanities, Commerce. Its upto you.
So it's depend on your interest in which field you want to continue your studies. Stream never become the barrier in the UPSC exam.
