Check out for your caste in this website.
For applying in JEE Mains/Advanced an annexure is released on JEE Main/ JEE Advanced website. You'll need to fill that annexure and get it signed by District Magistrate(for showing your recent status). The annexure is signed by DM on the basis of your caste certificate.

With reference to your above mentioned query, i would like to tell you that the caste certificate which is valid in JEE mains must be issued by the central Government only, and not by the state givernment.
For JEE MAINS and ADVANCED caste certificate is required only from central government as per the latest guidelines. This certificate is required to be in proper format as described by jee.
