Rather than looking for field that is most demanding in india you should look for branch that is of your personal interest.
whats the point of having a branch that you are not even interested in. So, I would say rather than looking for demanding engineering field look for your inetrest.
And to answer your question Computer Science and Information Technology are the most demanding field as of now.

Hello,
Demanding fields are technical branch like CSE or IT or core branch like EEE or ECE or EIE.
Civil and mechanical also have scope but it's a tiring work.
Every branch has a scope.. for that cause only colleges has it study departments.
For the most CORE and Technical have high scope.
