Following are the list of best books for preparation of JEE Mains in Hindi medium:
Keeping in mind that you have asked for One book per Subject, do go for the first book in priority wise (as mentioned).
Also, for Chemistry since there are 3 parts (physical, organic and inorganic), all the 3 books are necessary.
All that said, it will be my advice that try to go through all the books mentioned as all these books are really good and will help you crack Mains and as said Practice makes you Perfect.

Coming to your doubt of jee advanced,
Jee main is conducted in 4 sessions :-
The may session results will be the final result which will mention your percentiles for different sessions, your rank and jee advanced qualifying cut off percentile and if you meet the cut off then you can appear in jee advanced which is conducted within around 1 to 1.5 month of jee main results.
So, If you qualify jee main 2023 , then you will have to appear for jee advanced in 2023 itself and that too within 1 to 1.5 months of jee main results.

According to me 11 ,12 ncert book is good it co sist of simple language and try to build your concepts and write down all important formulas in note book

NCERT books are good for clearing basics, but are they enough for scoring well? No because

So, in addition to NCERT, you will have to follow other books as well

The Physics question asked in the JEE Mains examination is a total 120 marks, and the questions asked in the examination consists of both conceptual as well as moderate level of questioning types. So, just solving the NCERT textbook would not be a sufficient material for youth in order to score good marks in the examination.
The NCERT textbook might help you for preparation of any start for the chapter of any topic at the beginning, but you need to refer to books such as HC Verma concepts of Physics, and DC Pandey and try to solve the questions from these books in particular if you want to have a good knowledge of conceptual analysis and questioning.
