Apart from these three subjects, there are many others like Psychology, Economics, Sociology, Journalism and Mass Communication, etc. You can check the websites of top universities like Delhi University and Banaras Hindu University to know your options.

Subject of arts group like psychology, political science, history and English of CBSE board will be available in your mentioned School if the school is under CBSE Board of Education. First of all you have to search for this whether the school is affiliated to CBSE board and follow all the instruction regarding education and examination of CBSE board norms and forms then it will be easy for you to get your answer from the authority of the school you have mentioned.

For graduation you can choose any one of them because all three are equally difficult and easy. Sociology is more of facts and society, geography on the other hand is a practical subject. Political science is a prominent subject now. UPSC provides many options to choose as your optional subject including history, geography, political science, sociology, botany, etc. and it is hard to choose one among them. If you will go by number of candidates qualifying UPSC by taking some famous subjects like political science, anthropology and sociology they are among the highest.
But I would prefer you to choose your graduation subject as your optional. It will help you because you will already be having good hold on that subject. And in case your graduation subject is not provided by UPSC you may choose any subject of your interest and you can also refer to the annual UPSC report which has data of all optional subjects and number of candidates qualifying from that subject. Please choose your optional wisely because optional has highest weightage in the whole exam.

The Minimum Academic Qualifications for the (B.Ed) entrance exam at Jamia Millia Islamia necessary are as follows:
Bachelor's Degree in school teaching subject with not less than 45% marks and at least 50% marks in Master's Degree Examination in the same school teaching subject in which the candidate has applied.
OR
Bachelor's Degree in school teaching subject with not less than 50% marks.
The main school teaching subject in which the candidate is applying for should have been studied in all years or semesters.
Unfortunately, you cannot apply for B.Ed for history or political science in JMI but you can apply for B.Ed in Mathematics and Economics.

History, Geography and Economics are brilliant subjects to pursue for graduation. Each have their own benefits and scope.
Geography : You can pursue masters and qualify NET and get teaching as your profession. You can also work as demographer, cartographer, Climate analyst, pedogenist, and many more.
History : When you take history for your further graduations, keep in mind that it is a very vast subject and you may need to cram things. You can do masters and enter into teaching profession. You can be an archeologist, historian, Museologist, Archivist, etc.
Economics : It is a very high esteem subject. Again you can be a professor. You can serve as Financial economist, professional economist, Data analyst, etc.
So all three subjects have a good scope and you should choose the subject based on your interest because you will be able to carry on the subject only if you have interest in it.

If you want to take humanities, then the choice of your optional subject may depend on many factors. If you want to go for a corporate job in the sectors like finance, consulting etc, then choosing Economics as your optional should be the ideal choice.
If you want to prepare for civil services, then History is considered to be the best due to it's less complex nature and easy availability of coaching for it. The same goes for Home Science or EVS. And rest you can always choose a subject according to your level of interest in it without taking any factors in consideration.
