According to your question , let me tell you that it's very difficult to to predict about the csab rounds because every year the dynamics changes based on certain factors.
Various factors are considered while deciding the cut offs like number of candidates appearing in the counselling, number of vacant seats in college, previous years cut offs and difficulty level of the paper.
As per my knowledge , cse would be a tough call for nit surathkal but for mnit jaipur if seats are vacant it's possible to grab.

AI is a specialization course which is essentially a sub part of CSE. AI have multiple application and hence can be a really good career if one is sure about it. See when you are thinking of choosing the specialization then its always better to be sure about it.

There is very less chance that you can get NIT surathkal CSE branch with this rank but the chances are high that you can get ECE and other branches. You can get ECE in all the three top NIT which is Warangal, Trichy, and Surathkal.
And if you are interested only in CSE then you can choose these college while choice filling.

As we go through the latest cut-offs of JEE-Main 2021 of JOSAA 6th round and also through the CSAB cut-offs of last year then it shows that no seat was allotted to ST female candidate of Karnataka for the asked branches so it is little bit difficult to give you very precise prediction but if we see overall cut-offs then seat allotment cut-off are rapidly increased for 2021, the seat for which closing rank was 717 in 2020, in 2021 the rank closed around 212 for the same seat. And by compiling overall data you have very low chances to get the seat in mentioned branches of NIT Surathakal even after having female and home state quota.

I would like to inform you that information regarding offline classes has not been released yet so nothing can be said. So have some patience, It will be open soon may be.
However, last year it was announced that for the session 2020 2021 the classes would be online. It is difficult to expect the same this year.
Offline classes have been allowed by the UGC Guidelines but the decision lays in the hands of the college administration. Therefore, you need to contact the college authorities for the updates of commencement of classes and their mode of conduction. If you have been allotted the college, then you can also get in contact with your seniors who can relay you the current situation. However, as a precautionary measure, only final year students are allowed in the campus.

Nit surathkal is considered to be one of the best nits in all over India so the placements is top notch in this nit. Talking about the placements the median package for all the branches is 8.5L but if I take only about the civil engineering it is around 6.5L . Many companies comes for recruitment and also internship. The Tata group comes for placement, Vedanta, LNT and many more.

As you told that you are not interested in any branch and considering you don't know the insights of this branch so let me tell you that for non core and higher packages you should go for the ece branch because technically the placements in the ece branch is pretty good as compared to the mechanical branch.
But if you have good grip on mechanics subject or fluid mechanics of thermodynamics and you have a liking for machines then you should go for that. Lastly its totally your call what you want to choose but as per my opinion due to your problems in family you would get a higher pay scale in the ece branch.
