Between IT and instrumentation, you should opt for a IT.

Because it has much better placement and you can do master's easily. There are far more companies in IT than instrumentation. 

It is much easier to recognize your talent in IT sectors.

Last decision is yours.

see jadavpur university is the one of the best university in india., almost every student of btech get placed. some goes for higher study in abroad, however between it and instrumentation i think you should follow your interest as instrumentation is  a physics based subject with the knowledge of digital electronics, microprocessor etc. and information technology is software programming base subject.
