Yes you are eligible to apply for AME CET as it's eligibility criteria no where says anything about eyesight. That being said, you may pursue aerospace engineering and it has a good scope all around the world considering the ever growing aviation industry.

You should definitely apply for the exam and keep going with your preparation for the same.
