There's no much difference between IIHM and IHM, IIHM stands for international institute of hotel management which is a private body and has more convenient facilities where as  IHM stands for institute of hotel management  which is a government body, may be you won't get all food facilities

IHM Delhi offers various UG and PG courses.The eligibility criteria is different for different courses.For B.Sc courses the eligibility is to score a minimum of 50% marks  in 10+2 with English as one of the subjects.The admission is done on the basis of marks scored in the NCHMCT JEE.

The admission to IHM, Lucknow is through scores obtained in NCHMCT JEE conducted by NCHMCT Committee.
The basic eligibility criteria for B.Sc in Hospitality and Hotel Management includes:
Candidates must have completed in 10+2 system of Senior Secondary examination or its equivalent with English as one of the subjects.

There is no such system to get direct admission in any IHMs. You have to participate in NCHM counselling to get a seat in the participating colleges. But if the IHMs does not get enough candidates,the IHMs may approach you via texts for direct admission for the vacant seats
