As the counselling is under process at this time so it would be little bit difficult to guide you with exact cut-off rank of this year but if we go through previous years cut-offs then according to that, for General candidate at least 680+ marks are required out of 720 for AIIMS colleges because AIIMS are considered to be as most prestigious institutions for MBBS therefore the competition is also quite high and hence the cut-off goes this much.
It is quite difficult to make any accurate prediction of exact marks for any particular college because the cut-off keeps on changing every year depending upon various factors such as :-
*** number of candidates appeared in NEET 2021
*** difficulty level of the paper
*** top score for NEET 2021
*** total number of seats available for admission and so on.

AIIMS is one of the most prestigious medical College in india. At 300 marks even SC/ST category candidate can't get a seat in any of AIIMS so there's impossible for Gen category candidate.
At this marks you will not get any government medical College in india through general category neither through AIQ counselling or your state counselling.
To get AIIMS, rishikesh in general category you must get 650+ scores to have safe chances that also will not guarantee a seat because cut off changes every year.

That means if you score 600+ marks then you will be allotted seat as per your All India Rank for 600+ marks and your seat allotment won't be affected by your XII Standard percentage.
------ Also I would like to inform you that going by the seat allotment data of Round 1 of NEET UG All India Quota, AIQ Counseling, last candidate from SC Category to get seat in AIIMS is in AIIMS Madurai with All India rank a 43,707 which corresponds to 554 Marks.
------- Since AIIMS Madurai is recently opened institution hence its cut off is low, if you score 650+ marks you can get more established and renowned AIIMS such as AIIMS Jodhpur and AIIMS Bhopal.

With reference to your above mentioned query, i would like to tell you that to get Clinical seat for General category you neet to get 50th percentile for General category students.
NEET PG cut off General category is 50th percentile , while for SC/ST/OBC aspirants, it is 40th percentile. Last year, NEET PG cutoff 2020 scores for General category was 366, while cutoff marks for SC/ST/OBC was 319.

look MCC has listed some documents which will be required during the counselling process.
I.Allotment Letter issued by MCC
II. Admit Cards of Exam issued by NTA.
III. Result/ Rank letter issued by NTA.
IV. Date of Birth Certificate (if Metric Certificate does not bear the same)
V. Class 10th Certificate
VI. Class 10+2 Certificate
VII. Class 10+2 Marks Sheet
VIII. Eight (8) Passport size photograph same as affixed on the application form.
IX. Proof of identity (Aadhar/ PAN/ Driving Licence/ Passport)
X. For NRI/ OCI/PIO/Foreign Nationals candidates following documents are mandatory: a) Passport copy of sponsorer, embassy certificate b) Sponsorship affidavit (stating that sponsorer is ready to bear the expenses for the whole duration of study) c) Relationship Affidavit (Relation of Candidate with the sponsorer)

In the document verification process of at any AIIMS respective centre, where the officials examine your original documents and you are also advised to bring at xerox copy of these documents which are submitted during the time of document verification and counselling at the nodal centre respectively. The original documents are are given back to the candidate after proper verification and xerox copy are kept as a proof of documentation from the institute.
