Whenever you join a new degree/professional courses then your original documents like passing certificate, marksheet, caracter certificate, school leaving certificate are taken by the college authority. And now you want to join the mbbs course then there also they will need all of your original documents so you will have to take all that from the previous course.
So many college ask the students to fill a bond that if you quit in between the course you have to pay whole course fee or any bond amount mentioned in the paper.
So I don't know about ihm mumbai and there are no related information is also available on internet so it's better to ask your college authority about the process of quiting the course and what all you need to do get back your original documents. They will guide you through this. Then also you should have good reason why you are quiting the course to tell them.

IHM Pusa provides placement opportunities to almost all the students of the college. Various companies like Taj, ITC, Leela, Oberoi, Marriott, etc., visit the college for offering placements. The average salary offered is around Rs. 20,000 to 25,000 per month. The highest salary offered can be around Rs. 60,000 per month.
The infrastructure of the college is average. The campus is very small, Labs are well-equipped. Wi-Fi facility is not available for students. An auditorium and a library are available here. The canteen or bakeshop serves delicious food for students.
The faculty members are superb. They all are well qualified and apparently always ready to help. They are always ready to explain the course curriculum to the students and they don't bar themselves to discuss their life experience in the industry. They motivate the students to go forward.
The infrastructure is good with spacious classrooms & all other facilities are available. The faculty is highly qualified and experienced. They always try to teach new things and help students.

both colleges mentioned in your query are prestigious colleges to pursue your education, but they do have a few differences. IHM is a government institute whereas IIHM is a private institute. IHM offers students an under graduation course of three years along with post graduation courses as well, for those students who want to pursue their masters. IIHM also provides both under graduation courses and post graduation courses, in addition it also lets students pursue one year of their education abroad. With respect to fees, the fees of IHM is considerably less as compared to IIHM as it is a government institute.

Eligibility
as per their guidelines. Admission is granted on the basis of merit and marks scored in NCHM JEE. IHM Kolkata BSc. admission and Msc. admission is done on the basis of NCHMCT JEE, a national level joint hotel management entrance exam conducted jointly by IGNOU and NCHMCT. This is followed by NCHMCT JEE counselling where seats are allotted to students on the basis of All India Rank (AIR) in the national-level examination.
A candidate under the general category must not be more than 25 years of age as on July 1, 2020, while for SC/ST candidates there is an age relaxation upto 28 years.
Candidates must pass in the 10+2 system of Senior Secondary examination or its equivalent with English as one of the subjects.
For certificate courses in food and beverage services or food production and patisserie, successful completion of H.S.C. (12th class of 10+2 pattern) or equivalent qualification with English as one of the subjects in the final examinations is required.

Infrastructure is alright compared to a government college but some things need renovations and i have heard it is being done. Hopefully it would be completed soon and the college would have better infrastructure than before
IHM Pusa has a decent infrastructure, College auditorium is good but the classes are not that well maintained, that can be a point of improvement. Kitchens, Bakery, Restaurant of college is fine and has all necessary equipment’s to help students understand.
Infrastructure is best of IHM Pusa . It provides best quality of classrooms and practical rooms. Wifi speed is good and well - maintained . Food provided by IHM pusa is Hygienic and the living spaces is clean .
