In terms of extra curricular activities and opportunities both colleges are same they both provide you different opportunities, internships,they both have technical societies.
VJTI is one of the best college in Maharashtra, also it is one of the oldest engineering college in Asia.
If you want a very good environment, good placement and faculties like IIT, you can definitely go for VJTI.

Generally all the non core branches are allowed to sit for placements of IT companies, in some cases even the students belonging to non core branches are allowed to sit for the placements. Since ece is a non core branch, you will be allowed to ait for most of the companies, some companies might restrict their placements for cse/it students but maximum number of companies are open to ece as well, do you need not worry. You just need to be have good skills for selection.

The MHT-CET or Common Entrance Test is an annual entrance exam conducted by the Government of Maharashtra. It is conducted by the Directorate of Technical Education. About the reservation is concern Around 50% of backward-class seats are reserved in the state of Maharashtra. The 200 MHT CET Seats Reservation will be based on Maharashtra's diverse backward class. OBC (Other Backward Class) has 19 per cent more seat reservations than Maharashtra 's Schedule Tribe and Scheduled Caste. Then, the rest will be for the categories of General and others.
In short total 66% seats are falls under reserved category.

For VJTI Veermata Jijabai Technology Institute Mumbai, student needs to get 92 percentile marks for computer computer engineering course of study and Information technology.
For COEP in Pune at least 95 to 96 percentile is needed for admission in the Computer Engineering course of study and Information Technology.

Both are autonomous and qualified colleges. VJTI is ranked as the top colleges of Maharashtra after IIT Bombay.
But if you want some choice between the two then I would recommend you to go for VJTI as it is a friendly college for the students. Rest is depends on which field you want to choose.

The facilities and infrastructure available for the course/department, such as Wi-Fi, labs, classrooms, and the library, are very Good . The quality of the facilities in the hostel, the quality of the food available in the mess and canteen, the medical facilities, and the sports and games are all very Good .
The classrooms are decent enough, with wooden benches, projector and AC's. Wi-Fi works in some classes and doesn't in others. The library is too good. It has all the books that you will ever need. It even has good Wi-Fi. You can be in the library for a whole day without feeling bored. The mess has okayish food—not that great. The canteen has better food than the mess. There's a cricket ground, a football ground and a basketball court as well, which is really good.
College has a very good infrastructure, however, the infrastructure is now old and there are efforts being put to renovate the college. Labs are a bit outdated, but the college is bringing in new facilities. The hostels are also undergoing changes and the new PG hostel has super good facilities.
