All the IITS ARE good for msc course and it depends on the subject you want to do msc in, but overall iit kharagpur, iit kanpur and iit roorkee are the best among the all but still if you can tell me the subject I can tell you better.

IIT Madras takes admission in Aerospace engineering through JEE Advance. So you cannot get admission in IIT Madras for Aerospace Engineering without appearing for JEE. No, 2581 rank will not fetch you a seat in IIT Madras through IIT Jam. With the rank of 2581 you can't IIT Madras even if you have sc quota. If you have st quota then you can get top old IITs like IIT delhi, madras with this rank.

IIT madras is one the best IITs in the country. So it wont be easy to get a seat in it.

But if you are aspiring to get a good branch in it and you belong to general category then according to the datas your rank should be under 2000 to get a good branch in it. If you are aiming for CSE the  your rank should be under 300.

see cutoff score changes every year and it depends on some factors like your choice of streams, seat matrix, number of participants etc, however at this score you have decent chances in iit guwahati, iit mandi,  anna university, bits, nit suratkhel, jadavpur university.

Regarding undertaking , you need to take out the print out of the format of the undertaking given by them on their website in which you need to write your name and your father's name in place of space . That paper you need to sign and upload. So it basically takes guarantee from you that if you are not able to show caste certificate , then you will not be considered for the seat available for that caste .

iits admission process follows the gate score, based on your gate score you will be eligible for admission, some of the subjects has interview session also. now this year gate cutoff is expected to slightly increased from previous years. however yu have decent chances in new iits and iits.
