See both the institutes are of great repute and both of them are great. But if you need to distinguish then I would recommend you to go for the IIEST. The reason behind it because:

Dear candidate IITDM Jabalpur is indeed a good Institution but your future career scopes are better accomplished if you carry out your Computer Science Engineering degree from IIEST. This is because in IITDM campus overall your experience would be good however IIEST is one of the prestigious institutions in India
