See if you ask for placement in any of old IIT then it would be better than any other colleges. IIT tag is itself very much for bringing great companies for campus.
M&C is a very good branch. You can consider it similar to CSE . It is no less. Many like to go for m&c branch if they don't get CSE.
Now placement in IIT BHU is good . Max package goes upto 30 lpa , avg is around 18 lpa. And if you are good in your studies and you develop your skills then you will get more than average packages.
See as you have provided different courses and different colleges. So we will take it one by one. First the college. IIT Roorkee and IIT BHU and IIT Guwahati. So see regarding IIT Roorkee and Guwahati both are one of the oldest IIT. BHU got IIT tag recently. So regarding placement , IIT Roorkee slightly Dominate over IIT Guwahati but sometimes Guwahati dominate . BHU is less than both.
But regarding research BHU is one of the best .
Now talking about ECE and ee . So it completely depends on your choice. Your preference . If you like doing coding with electric then ECE is best and also it is slightly inclined towards IT industry's. If you like pure electrical then ee is best.
I would suggest go for ECE in IIT Roorkee or if not then in IIT Guwahati. You will get a better environment .

See it is not completely true that IIT BHU students don't get foreign internships . There are some who get these internships.
There are some reasons , first is more than 9 pointers which is hard to get. Next comes the relations with other colleges and universities as the professor don't visit any college so no connection at all. And also financial problems.

Well most people tell you to go for your interest and follow your passion but how can a high school student tell if he likes chemical engineering better than metallurgy or mechanical better than civil. Since you are considering all the branches, that is a good thing because there are oppurtunities in every branch otherwise they would not be running. So I believe in choosing the best institute even with a lower branch hence
IIT Roorkee Metallurgy > IIT BHU Civil/Chemical > Other middle and lower IITs (any branch frankly)
First of all as the name suggests IIT Roorke offers Electronics and Communications Engineering whereas IIT BHU offers Electronics Engineering so definately some of the courses on Communications systems would be replaced by more core Electronics subjects. Placements do not vary much if we consider both the instititutes.

There is a popular saying that "choose branch over college". In your case, the branch is CSE the most promising branch and the branch with a 100% placement. Moreover, CSE is quite easy while compared to other branches like electrical. If you do as much effort in CSE as you will in Electrical then you will be going places.
However, if you have a knack for electrical and like circuits and all those theorems then go with your interest. But if you do not have any interest in Electrical or have no interest at all then I strongly suggest going with CSE. NIT Allahabad is a very good NIT in fact among the top 5.

Congrats for being alloted in first round of josaa in pharmaaceutical engineering at iit bhu,you query is not clear ,but if you ask for upgradation in next rounds then there is not any scope,

The infra is I would say average only not too good and not too bad …it need to work on its infra they really need to work on that otherwise people would stop taking IIT BHU …most of the nits have better infra

The infrastructure of this IIT needs to be improved as far as other IITS are concerned. We will find decent hostels situated on campus. It also has its own mess, which provides decent food. Classrooms are also well-equipped with modern facilities. Here, the library has very limited capacity so it needs to be expanded.
