Well, 289 is a very secure and safe rank in JEE advanced.
Eligibility criteria for qualifying jee advanced:
Minimum 75% should have been secured in 12th standard (or equivalent) examination. For the SC/ST/PwD category, the aggregate marks is minimum 65% OR. The candidates should be within the top 20 category percentile of the qualifying examination.
Other than this, each every document should be clear and original. Even if you secure a good score in JEE advanced but there is some issue with the documents, it might lead to disqualification of your name.

To take admission into M.Tech courses in IIT Bombay or any other IITs, candidates will be required to register separately on the official websites of the respective institutes.
Along with the registration at the institutes’ websites, candidates will also be required to register at the GATE COAP 2020 portal.
Candidates must note that those who have passed their graduation from any of the IITs with a CGPA of 8.0 or above will be exempted from having a valid GATE score. Being one of the topmost Engineering college of the country, you need to score exceptionally well in JEE Advance. According to 2020 JEE Advance Cut Off list, To get CSE in IIT Bombay you need All India Rank between 50-60 in JEE Advance for General category and for EWS Category you need All India Rank in top 20 to get CSE in IIT-bombay.

See the cut-offs keep changing every year and this year also we saw a slight dip in the cut-offs but counselling is yet to be conducted so it would be bit difficult to provide you the exact chances of seat allotment in any particular college on the basis of your JEE-Advance rank but yes if we consider the previous year's data and align it with overall cut-offs of this year then we can help you with expected chances of allotment on such JEE-Advance rank.
So according to the category and rank mentioned by you in the question you have good chances of getting IIT Bombay with Aerospace Branch but low chances for Mechanical branch as per the data analysis of previous years cut-off.

After looking these stats, IIIT Hyderabad seems better but that is not the case. Because IIT Bombay has more number of students and it also has other branches like Mechanical, Civil whose placement is not as good as CSE. If you take CSE alone than Both IIT Bombay and IIIT Hyderabad has similar Placement stats.

None I believe. IITB Aerospace will moderately deprive you of strong Core Engineering Placement Prospects, while at IIT ISM, youll have to compromise on the Top IIT Status and vibrant campus life. My suggestion would be at this Rank you get branches like Mechanical at IIT Madras, IIT Kanpur, IIT Kharagpur as well as Electronics at BHU, Instrumentation at KGP, Chemical at IITD and these maybe better options than the above.
However incase youre genuinely interested in Aerospace, IITB is great, incase youre genuinely inclined towards CSE, you may perhaps choose one of IIT Bhubaneshwar, Patna or Mandi.

Although you have strong Placements in Aerospace Engineering, mostly they are restricted to Non Core Sectors like Finance, Data Science, Software and many More like Edtech and Consulting. As far as Core Companies are concerned, you do have Airbus, Rolls Royce, GE Aviation, JLR (Mechanical), Agnikul Cosmos, Collins Aerospace, Honeywell as well as few more Companies, however the condition is scarce. Most of the Aerospace Engineering enthusiasts prefer moving US or Germany, for MS/PhD in Aerospace/Avionics followed by a strong career in Industry and Research.
