Let's clear you a think IIT always IIT. It have own glamour. If you get IIT Bombay in environmental science in my opinion you should take this opportunity. Because every year cut-off marks will change, question paper also change so next year you don't get this good rank so you will regrade for this.
Another think if you are not interested in this subject and you want to another subject and college is not matter you at all then you should avoid this opportunity. And you should take one year drop and prepare your self for better achivement.
But it's totally your choice, so just think on it carefully dear.

To start with it is a great score to get below 100th rank in jee advanced . Considering the cutoff for the IIT bombay , a person below 100th rank will definitely be qualified and counselling rounds have already been started. Round 5 is yet to be announced but the closing rank of Round 4 is said to be 1101 for engineering physics department

Hi! IIT Bombay- IIT Bombay is consistently ranked among the top IITs every year. It has various departments and undergraduate programs like Aerospace Engineering, Biosciences and Bioengineering, Chemical Engineering, Civil Engineering, Computer Science & Engineering, Earth Sciences, Electrical Engineering, Energy Science and Engineering, Mechanical Engineering, Metallurgical Engineering & Materials Science. The Tuition fees here, for current academic year are Rs. 2.2 lacs per annum. The total cost of 1-year study at IIT including mess bills is about Rs. 2.5 lacs per annum (excluding hostel and books). Placements wise, the Institute secured 1,172 selections (including Pre-Placement Offers or PPOs) from 265 companies. The average package recorded by the 2019-20 batch has been INR. 20.34 LPA. You have not mentioned your category. Also every year the closing rank changes (not a sea change, still) depending on a number of factors.
As of last few years data,
2019:
For General male, the cutoff was in the range of ranks 1-63 while it was 10-313 for General female.
As for reserved ranks, the closing ranks were around 50.
2018:
For General male, the cutoff was in the range of ranks 1-58 while it was 12-290 for General female.
As for reserved ranks, the closing ranks were around 75.
