Hence I would suggest go for ism... But if you want iit mumbai then you can change your branch after first year if your perform the best among your batch.

As per your question, both of the college are good but it depends on you in which branch you are interested in. And accordingly you can choose college but as you asked question so I may compare both the colleges as per your given branch in terms of placements and figure out which one would be better for you to go with. So
1) IIITH:-
They have good infrastructure where as per placement they have highest CTC package of 46LPA and average package is around 21LPA which is amazing.
2) IIT bombay:-
They have good infrastructure as well the name indicates while they have highest CTC package of 60.28LPA and an average package of 20 LPA.
so as per CSE trends you may go with IIITH as they have good placement to as companies like Microsoft, google, came there to recruit candidates. But if you have your interest in mechanical branch then no doubt you may go with IIT bombay too as both of the colleges have their reputation and standards.

Admission for Engineering has two prospects. The first one is the branch you want to pursue, and your career and interest are the attributes, and the Second one is College, and the placement and tag are the motivation factors.
Metallurgical Engineering has a minimal scope in India over Mechanical Engineering. IIT Bombay and IIT Varanasi are both old IITs, though IIT Bombay leads in the ranking.
I will suggest pursuing Mechanical Engineering in IIT Varanasi will be a wiser decision than pursuing Metallurgical Engineering in IIT Bombay.

When the couselling procedure starts it goes from the top to bottom, so if you have filled IIT Bombay last, and you have some other college higher in the list that you can get based on your rank, then you will get a seat there. The counseliing will not go till the last.
If however, it goes till the end choice, it meant that you have a score which is not enough for any of the colleges.

It depends on your interest about the domain in which you want to pursue your career. Definitely, IIT Madras tag is a laurel compare to IIT Bhubaneswar. But, what will help in your future is the branch and knowledge. So, I will vouch for Mechanical Engineering at IIT Bhubaneswar rather than Metallurgical Engineering at IIT Bombay.
IIT Bombay Metallurgy and IIT Madras Chemical both are excellent options with excellent opportunitues in all of Core, Non Core, IT, Software and Analytics Sectors.
Perhaps when making a choice between the above two, I would suggest you to choose the Institute at vicinity of your hometown. Both the Branches have equally great Placements, Academic Outlook, Research opportunitues and Infrastructure.

As far as Non Core/IT/Finance/Consultancy Placements are concerned, both being top IITs provide substantial opportunities with good Pay scales and maximum packages lying between 14-20 LPA.
Core Placements for both your options are Bleak. Last year as far as I remember only 3 Companies lined up for Ocean Engineering Students, ExxonMobil, Indian Register of Shipping and Oceanergy. IIT Bombay Environmental too faces same dearth of Core opportunities.
I would advise you to forgo the top 5 IITs and target the Next 5 IITs. You will surely get either of Chemical/Metallurgical/Industrial at IIT Roorkee, BHU, Hyderabad, Indore and Guwahati.
Another choice can be taking a Core Branch like Mechanical , Petroleum or Chemical at IIT ISM Dhanbad.Core placements at IIT ISM are at an all time high there.

The campus at IIT Bombay is huge and got modern labs and classrooms. Libraries are full of books and online stuff, high speed internet everywhere. Labs have good equipments for research in computer science. Its nice but sometimes crowded. Hostel rooms are okay, not fancy but clean. Overall, infrastructure help a lot in PhD work.
IIT Bombay offers a spacious campus with modern classrooms and advanced labs and the libraries were equipped however the workload can be intense and the campus can feel crowded during peak hours overall it supports academic excellence with a few challenges
My college has all the necessary infrastructure, facilities and equipments from both academics and sports activities. It has Hostels for all the students from btech, mtech to phds so we don't have to look for the Pg outside the college.
