Artificial Intelligence is a field in Computer Science thay one can specialise in with advance degrees in computer science. Let us consider the two universities that you suggested.
NIIT University was started in 2009 and is a fairly young University when compared to RVCE college Bengaluru which was started in 1963.NIIT offers B.Tech as well as Master of Science degree in Computer Science . RVCE college also offers an undergraduate as well as M.Tech degree in Computer Science.
Both RVCE and NIIT are AICTE recognised.
Moreover, RCVE has been recognised as a centre of Excellence by the government of India under Technical Education Quality Improvement Programme(TEQIP) so if you work and develop any project and gets selected by your TEQIP board in college then you will get funding from the central government under TEQIP. It will give you opportunities to develop your projects further and it will be fully financed by the government of India. And for fields like artificial intelligence ,it is important that one works on projects and practical implementation to undertake and specialise in the field. With such opportunities ,you will definitely get the chance to hone your knowledge and skills in Artificial intelligence. Also RVCE has many affiliations and memorandums with institutions and companies both outside and within the country mentioned . It is ranked 49 in the list of National institutal ranking framework of India which gives an overall rank of the educational institutions in India. They also have several student projects that went on to win many prizes and achievements in India.
So ,comparing these two colleges i.e RVCE and NIIT University ,I would definitely advise RVCE as it would give you opportunities to not only develop your theoretical skills but also your practical skills and you will also have many options of opportunities at your disposal to develop yourself. With programs like TEQIP at your disposal ,you will get chances to hone your skills for your future career in Artificial Intelligence and not only that ,there will also be chances for your exposure with the college's affiliations to companies and institutions.
I hope you make the right choice based on the given facts and lastly ,I am neither a student of both these colleges but just giving you an unbiased comparison of these two universities based on facts.

RV College has a large and modern campus with smart classrooms, advanced labs, and good Wi-Fi access. The library is huge with plenty of books and e-resources. The environment feels professional, giving students real exposure to quality learning facilities.
RVCW boasts modern infrastructure with well equipped classrooms, state of the art labs, spacious hostels and abundant green spaces. it provides a conductive evironment for academic and personal growth.
When I graduated, the ECE building was falling apart. The library was understocked as well. I see they've made improvements recently so its better now. The Wifi was unreliable and the gym was subpar. The labs were well stocked though. The food used to be good in my first year but declined along the way.
