see you did not mention which course you have enrolled for, however if you opt for bsc in chemistry , then you may take additional subjects as biology or nutrition or computer science as per the availability of your colleges, but if you want to come in bio technology

Yes NCERT Biology is enough for getting good score like 320 + or more.
This is because almost 95% or more of the questions in NEET Biology are from the concepts of NCERT.
But yes only reading NCERT Biology is not going to help you in your examination
