As per you belongs to to general category, maybe there will be some difficulty to get government MBBS and BDS colleges. But you can get private MBBS and BDS colleges easily

yes it is acceptable. If you apply for IIT campus located in your domicile state the you will go under home state quota else you will go under open category.

There are very less IIT campus and not every state has IIT campus. so students can apply for IIT

Your marks are good but as per the last year cutoff,OBC candidate having NEET score around 500 had a good chance to get a government college.So as per score,you can get good private college and some good BDS government college.Wait till the official cutoff list gets released.
