For choosing between these two, your aptitude matters as Stats honours to be more mathematically rigorous than Economics Honours. So, if that’s fine then the problem of choice matters.
So you’ve choice between these options then Statistics is better than Economics because you can always switch from Statistics to Economics but vice-versa is difficult. Also, much of economics is now driven by Empirical work. So, knowledge of Advanced Stats will be better! Statistics training in Economics is still very limited. Also, if you don’t want to switch to Economics for higher studies then you could look at Actuaries where Statistics coursework will be handy. You need to choose a area where you know that this is your interest and you can do very nicely in this area.

But the aspect regarding Theory, I am sorry but no as Math and Statistics are both practical based examinations, you cannot just opt for theory.
